Lechon Paksiw

Pork meat is well-known and eaten in many countries. It’s one of the most commonly consumed meats worldwide. It is eaten in several forms including cooked, processed, cured, smoked and also a common ingredients in sausages. Yet to some people or countries, pork is a taboo food item.
Though pork is high in thiamin or Vitamin B1, but still pork meat isn’t really a very nutritious food for us since its high in saturated fat and cholesterol. However, who couldn’t resist this “lechon paksiw” as we may call here in the Philippines, a very delicious dish of every Filipino. Each time when Pinoy have their lechon served during fiestas, anniversaries, birthdays, christening, Christmas and even new years, a leftover of this so-called lechon would be used as a “lechon paksiw” earlier in the morning.  

This “lechon paksiw” in the photo was prepared and cooked by the husband of my sister-in-law. And it really tastes good. Thanks for the luscious dish.
